Béchamel


BechamelIngredients:

  • 2 Tbs. butter
  • 3 Tbs. white bread flour
  • 1 1/2 cups hot milk
  • 1/8 tsp. nutmeg
  • salt and freshly ground white black pepper to taste

Directions:

  1. Heat milk in a saucepan and keep hot.
  2. Melt butter in a saucepan over very low heat untill it starts bubbling.
  3. Remove from heat making sure butter does not turn brown
  4. Add the 1 Tbs. flour stirring constantly untill smooth then add the rest of the flour the same way.
  5. Return to medium heat. Start addiing 1/4 cup milk at a time while stirring, When absorbed, add more increasing quantity as you proceed.
  6. Add nutmeg, salt and pepper to taste
  7. Continue cooking at a slow bubble stirring all along untill the sauce has the consistency of heavy cream.
  8. Remove from heat and use.
