Béchamel
Ingredients:

2 Tbs. butter

3 Tbs. white bread flour

1 1/2 cups hot milk

1/8 tsp. nutmeg

salt and freshly ground white black pepper to taste
Directions:
- Heat milk in a saucepan and keep hot.

Melt butter in a saucepan over very low heat untill it starts bubbling.

Remove from heat making sure butter does not turn brown

Add the 1 Tbs. flour stirring constantly untill smooth then add the rest of the flour the same way.

Return to medium heat. Start addiing 1/4 cup milk at a time while stirring, When absorbed, add more increasing quantity as you proceed.

Add nutmeg, salt and pepper to taste
- Continue cooking at a slow bubble stirring all along untill the sauce has the consistency of heavy cream.

Remove from heat and use.
