At 3PM the same day, the meeting entitled Dolci Dolcezze… e non solo (Sweet Sweetness ... and then some). Marketing experts, journalists and publishers of wine and food magazines, producers of dessert wines and pastry chefs will meet to analyze the current state of the market for dessert wines. During the meeting, the participants will sign the Manifesto del Vino Dolce (Sweet Wine Manifesto,) featuring a set of rules for the correct service of this type of wine and how to best promote and take advantage of them with consumers.

"Despite the fact that sales of dessert wines has been affected by the current crisis which hit restaurants badly," said Fausto Maculan of Azienda Agricola Maculan, "sales to consumers have been fairly satisfying. The fact is that sweet dessert wines please most [wine drinkers]. To be successful, a dessert wine must guarantee consistently the highest quality standard at a competitive price. If a well respected production brand backs all this, and if the same wine has been produced for over 20 years, then success is likely to come easily."

Best sommelier from Vicenza.

"After the 2005 boom in desert wines sales," added Giancarlo Cavazza of Azienda Agricola Cavazza, "the consumption of sweet wines stabilized. A good dessert wine must have excellent balance of sugar and alcohol content. Acidity is very important as well, and must be medium-high in order to cleanse the palate."

DolceVi was organized by Co.Vi.Vi. (Consorzio Vini Vicentini, or Consortium of Wines from Vicenza) and Vicenza Qualità (Vicenza Quality), with the support and contribution of the Chamber of Commerce of Vicenza, the municipality of Bassano del Grappa and the administration of the Veneto region, in collaboration with the Veneto chapter of the Associazione Italiana Sommelier (Italian Association of Sommeliers), Gruppo Ristoratori Bassanesi (Bassano del Grappa Restaurant Group) and Veneto chapter of Slow Food.

Saturday and Sunday, the Associazione Italiana Sommelier organizes Le Dolcezze Italiane (Italian Sweetness), where participants can ask information and purchase dessert wines, pastries and desserts.
