November, time to start thinking about the next holiday season, with its traditions and festive spirit. Thus we have selected a small baking company from Friuli, Quality Bio s.a.s., as Company of the Month for November 2005. Among other products, Quality Bio produces seasonal small Panettone, the traditional Italian Christmas sweet bread, with a twist. In fact, this small company uses exclusively ingredients gleaned from organic farming, as certified by IMC (Istituto Mediterraneo di Certificazione, or Mediterranean Institute for Certification).
The Company
Located near Udine, in the northeastern Italian region of Friuli - Venezia Giulia, Quality Bio was founded in 1996 from an idea of Marco Sartor and Donatella De Marco, who decided to develop organic recipes for tasty baked products.
The company started out as a small pastry shop, but in September 1998 moved to a new, bigger location and invested capital in new technology and machinery to meet the gradually increasing market share.
Today, Quality Bio employs ten among the most qualified local pastry artisans, and is able to provide high production output, while at the same time maintain the quality and flexibility typical of a home-based business.
The Products
All products are made with either wheat, spelt, corn, rice, or kamut flour and are prepared with non-hydrogenated vegetable oils, without addition of chemical substances or animal fat. Complex sugars, which release sugar gradually, with a low impact on glycemic index are used.

Quality Bio produces goods for people allergic to gluten, wheat flour, sugar, eggs, dairy products and yeast as well, and all the products are also available in family-sized packages.
