Here we continue our introduction of Italy's 155 Protected Designations of Origin (PDO, or, in Italian, DOP, Denominazione di Origine Protetta) and Protected Geographical Indications (PGI, or IGP in Italian, Indicazione Geografica Protetta) products.
This month we present two excellent extra virgin olive oils, the olio extravergine di oliva Dauno DOP from Apulia and the olio extravergine di oliva Toscano IGP from Tuscany.
Olio extravergine di oliva Dauno DOP
Extra Virgin Olive Oil Dauno DOP
(Apulia)
There are four different varieties olio extravergine di oliva Dauno DOP, which correspond to four different geographical zones of production: Alto Tavoliere (High Plain), Basso Tavoliere (Low Plain), Gargano (corresponding to the 'spur' in the heel of the Italian boot), and Subappennino (Apennine foothill area).
The olio extravergine di oliva Dauno DOP Alto Tavoliere color goes from green to yellow, its perfume is reminiscent of fresh fruits and almonds. The flavor is fruity.
The olio extravergine di oliva Dauno DOP Basso Tavoliere color goes from green to yellow. The perfume and flavor are fruity, with slightly hot, bitter taste.
The olio extravergine di oliva Dauno DOP Gargano color goes from green to yellow and the perfume is fruity, with note of green grass. The flavor is fruity with almond aftertaste.
The olio extravergine di oliva Dauno DOP Subappennino color goes from green to yellow,. The perfume is reminscent of fresh fruits and the flavor is delicately fruity.
The denominazione di origine protetta Dauno must be paired by one of the four geographic definitions above mentioned and appear on the front label. In addition, the label must include the year of production of the olives used to make the oil. The olio extravergine di oliva Dauno DOP must be sold either in a glass container, or in hot-dipped tin can containing no more than five liters of product.
The production area includes many municipalities in the province of Foggia, as detailed below.

Extra Virgin Olive Oil IGP Toscano (Tuscany)
The olio extravergine di oliva Toscano IGP has maximum acidity of 0,60%, color ranging from green to yellow, with chromatic variation over time, and pleasant fruity perfume.
The indicazione geografica protetta Toscano, which must appear on the front label, is eventually followed by one of the following geographical mentions:

The above mentioned geographical identification font, must not be bigger than the ones used for the definition Toscano. In addition the label must provide the year of production of the olives used to make the oil. Finally, this oil cannot be sold in container larger that five liters.

The production area covers the whole Tuscany region.
